Ingredients

    Ingredients:

    *Baker's Select Semi Sweet Chocolate, 8 oz
    Land O Lakes, Unsalted Butter, 8 Tbsp
    Granulated Sugar, .75 cup
    Vanilla Extract, 1 tsp
    Egg, fresh, 7 large separated.

Directions

cream room temperature butter with the 3/4 Cup sugar for 4 to 5 minutes. Melt chocolate in a double boiler, remove from heat and allow to cool. Add egg yolks to creamed mixture one at a time and blend after each addition. Add vanilla and cooled chocolate, beat to incorporate. In a separate bowl whip egg whites until soft peaks form. Fold in 1/3 of egg whites to lighten batter. Fold in remaining egg whites. Pour into 9 inch sprinform pan that has been lined with parchment and sprayed with cooking spray. Bake on middle rack in 350 oven for 40 to 45 minutes. Allow to cool in pan for 5 minutes. Cake will fall. Remove outer rim, turn cake out onto rack to cool completely. Serve with raspberry sauce and/or dust with powdered sugar.

    Incredible!
    This is an excellent flourless chocolate cake. It is simple (only 5 ingredients) and produces a dense, yet still light cake. Highly recommended. - 3/25/12
