Ingredients

    1 pkg. Boca crumbles
    1/2 cup taco sauce
    1 small can red enchilda sauce
    1 can low sodium black beans, drained
    1/2 cup canned corn, drained
    2 cups 2% mexican blend shredded cheese
    4 Low Carb High Fiber Whole Wheat tortillas (no more than 80 cal each)
    Light tortilla chips to crush over the top

Directions

Mix crumbles, sauces, beans and corn and simmer until hot. Put about 1/2 cup of mixture in center of tortilla, top with a sprinkle of cheese and roll, put into a sprayed casserole dish. Do this for all 4 tortillas and pour remaining sauce on top and sprinkle on remaining cheese and top with crushed tortilla chips. Bake at 350 degrees for about 30 minutes or until bubbly.
