    3-4 boneless skinless chicken breasts (1 lb)
    1/2 tsp black pepper
    1 & 1/2 cups water
    3/4 cup roland's roasted garlic quinoa
    1/2 cup fresh diced parsley
    3 tbsp red wine vinegar
    1 tbsp orange juice
    1 tbsp olive oil
    2 tbsp almonds (sliced or chopped)
    1 cup diced apples with peel
    1/2 cup dried cherries
    Non stick cooking spray


Make the quinoa first so it can cool while you are cooking the chicken.


Coat a grill pan with cooking spray and heat over medium-high heat. Season chicken with pepper: cook 8-10 minutes a side until cooked through. Cool 2-3 min, then slice into thin strips.
Meanwhile fill a saucepan with water and add the quinoa. Bring to a boil:reduce heat to med-low, cover and simmer 15 min. Fluff quinoa with fork and chill in frig for 15 minutes.
In a medium bowl, whisk together the parsley, vinegar, orange juice and oil. Mix in the almonds, apples, and cherries. Add the quinoa and toss to coat. Serve topped with the chicken.
