    8 oz pasta, uncooked
    3 tbsp butter
    2 tbsp flour
    3/4 cup milk
    4 oz cheddar cheese, shredded
    1 cup cauliflower, frozen


In a large saucepan, bring 4 cups of water to a rolling boil. Add pasta and cook until tender. Drain and set aside.

In a small saucepan, melt butter then whisk in flour. Cook for 1 minute while continuously whisking. Add milk and whisk until smooth. Cook until thickened. When bubbles begin to pop from thickening mixture, stir consistently for one minute. Turn off heat and add
cheese. Stir until melted.

In a microwave safe bowl cook cauliflower and a small amount of water for 5 minutes, covered, on high. Stir and cook for 5 more minutes or until soft. Mash well and add to the pasta.

Pour cheese sauce over pasta and cauliflower mixture. Stir well to coat.

Serving Size: makes 5 1-cup servings
