Ingredients

1 1/4 cups spelt flour
1 cup oatmeal baby cereal
1/4 cup brown sugar/cane sugar/sucanat
1/3 cup cocoa
1 tbsp baking powder
1/4 tsp baking soda
3 very ripe bananas, mashed
1/2 cup soy milk/rice milk
1/3 cup oil
1 tsp vanilla
Directions
Pre-heat oven to 400 degrees and line or spray a muffin pan.
In a large bowl, combine the spelt flour, oatmeal cereal, brown sugar, baking powder and baking soda.
Using an immersion blender, blend together the bananas, soy milk, oil and vanilla.
Add the wet ingredients to the dry ingredients and stir just to combine.
Drop the batter into the muffin cups. Bake 10-12 minutes for mini-muffins, or 20 - 25 minutes for regular muffins.
Serving Size: 24 mini-muffins or 12 regular muffins
