    6 tbsp caster sugar
    3/4 pint apple juice
    3/4 pint water
    rind & juice of 1 lemon
    1 tsp ground ginger
    7 star anise
    6 pears, peeled


Place the apple juice, water, lemon rind and juice, ginger, star anise and sugar in a large pan. Bring to the boil

Place the peeled pears in the liquid, making sure they are are coverd by the liquid, and simmer for about 15-20 minutes until the pears are tender.

Serve with cream or Chantilly cream.

The pears can either be served with or without the liquid.
