Ingredients

    2 yellow bell peppers, cut into strips
    2 small onions, cut into wedges and layers separated
    4 roma tomatoes, seeded and cut into strips
    2-4 Tbsp lime juice
    1 Tbsp cumin
    2 tsp oregano
    Salt/pepper to taste
    12 corn tortillas

Directions

Heat a dry cast iron skillet over high. Cook corn tortillas 30 sec - 1 min per side. Set aside, covered in a clean towel to keep warm. (This can take 24 min, so start about 15 minutes before you want the fajitas to be ready if you want the filling done at the same time.)

Heat cast iron skillet over high heat and add onions and peppers. Cook 7 minutes, stirring occasionally, and adding a little water if they start to stick.

Add tomatoes, lime juice, and spices. Cook until tomatoes heat through and start to get tender.

Serve with heated tortillas and whatever toppings you like. I like them as is.
