    1/4 c. soy sauce
    1/3 c. HOT water
    1/4 c. peanut butter
    1-1/2 tbsp. packed brown sugar
    1 tbsp. lemon juice
    1/4 tsp. garlic powder
    1/2 tsp. crushed red pepper
    2 bags "Boil in a Bag" brown rice
    1/2 lb. boneless, skinless chicken breasts, cubed
    1 tbsp. olive oil, divided
    12 oz. frozen broccoli
    8 oz. frozen cauliflower
    1/2 c. shredded carrot


You can substitute a 16-24 oz. package of frozen, unseasoned stir-fry type mixed veggies. Also, you can use 3-4 cups of your favorite fresh, chopped veggies.


Mix all sauce ingredients in a bowl; set aside. Cook noodles according to package directions. Meanwhile, cook chicken in half the oil until no longer pink. Add the rest of the oil, then veggies and cook til veggies are tender-crisp. Toss chicken mixture with cooked rice and stir in sauce.

Serving Size: 6 servings.
