    1 Tbsp olive oil
    1/2 large onion
    2 links hot Italian sausage
    1/2 turkey kielbasa
    1 c fresh mushrooms
    4 c spinach
    15 oz part-skim ricotta
    1 egg
    2 Tbsp garlic
    1/4 c fresh basil, chopped
    1 can favorite tomato sauce
    lasagne noodles (I use the ones you don't pre-cook)


Saute onion in oil. Add bite-size sausage pieces (both kinds of sausage), add mushrooms. When meat is cooked, add spinach and cook until wilted. Steam frozen broccoli in the microwave in a covered dish with a bit of water. Mix egg, ricotta, basil, and garlic in a separate bowl. Spread 1/3 of tomato sauce on the bottom of a 13x9 inch glass pan. Add 3 lasagne noodles across the bottom. Spread 1/2 of the ricotta mixture across the noodles. Add 1/2 of the sausage mixture and top with 1/2 of the broccoli and 1/2 of the mozzarella. Repeat, but end with tomato sauce topped with mozzarella. Bake at 375 Farhenheit for 60 min, covered with foil.
