    16 oz Tilapia
    4 tsp Central Market Organics Dijon Mustard
    1 egg
    .5 cup bread crumbs--low-carb (LC Foods)


You may need to add mustard or bread crumbs depending on the size of your fillets. Also, recognize the carb count will increase somewhat significantly if you use regular or even whole wheat bread crumbs. (You can get the low-carb bread crumbs at holdthecarbs.com. They are delicious!)


Preheat oven to 350. Put a sheet of parchment paper on a baking sheet (helps the underside of the fish come out crispy). Mix egg and mustard in a shallow bowl. Put bread crumbs in a shallow bowl. Dip and cover each fish fillet in the mustard mix then in the bread crumbs and place on the baking sheet. Bake about 18 minutes or until fish is flakey.
