Ingredients

    1 box Penne, whole wheat
    1 block firm tofu
    2 eggs, or 4 tbsp ground flax with 6 tbsp water
    1/4 tsp salt
    1/4 tsp pepper
    1/4 tsp nutmeg
    2 tbsp milk
    1.5 cup spaghetti sauce
    1 tbsp dried parsley
    1 cup Daiya
    2 tbsp pecorino romano

Directions

Preheat oven to 350F. Boil pasta according to directions.
In medium bowl, combine tofu, eggs/replacer, spices, milk, and sauce. Once pasta is boiled and drained, pour into prepared 8x10 dish. Pour sauce mixture over it and stir until mixed. Spread cheeses over the mix and then bake for 25-35 minutes, or until bubbling on top.
