Ingredients

    *Hot Italian Poultry Sausage Patty - 2 patties
    Zucchini, baby, 1 large
    *Polenta, 1 lb (from produce)
    Tomato Sauce, 1 jar
    Mozzarella Cheese, part skim milk, shredded 1 oz Mozzarella Cheese, part skim milk, 2 slices
    Ricotta Cheese, part skim milk, 1 cup
    Parmesan Cheese, grated, 3 tbsp
    chopped fresh basil (bunch)

Directions

Precook sausage and break up.
Slice zucchini and polenta into 1/4 inch slices as sausage cooks.
Mix cooked sausage, basil, and sauce in a bowl.
Line a skillet with polenta and zucchini (recipe says to layer- depends on the size of the pan.. might want to pre cook the zucchini a little)
pour sausage mixture on time of polenta/zuchini,
Put cheese on top (dollops of ricotta or just sliced mozz or sliced provolone).
Cover and cook until cheese melts and sauce bubbles (10-15 minutes).
Add fresh basil and parmesan on top.
