Introduction

I love red clam sauce - the more garlic, the better! I serve this over pasta (fresh is best). I love red clam sauce - the more garlic, the better! I serve this over pasta (fresh is best).

Ingredients

    2 cans (drained) minced clams, 6.5 oz each can
    1 box (26.45 oz) Pomi Strained tomatoes
    1/4 cup dry white wine (optional)
    1/4 cup water (optional)
    4 cloves garlic, minced (more or less to taste)
    2 tbsp olive oil
    1/8 tsp allspice
    1 bay leaf
    oregano, basil, black pepper, crushed red pepper to taste

Tips

You could use pureed tomatoes instead of the strained tomatoes and also reduce the oil to 1 tbsp.


Directions

Heat olive oil in a sauce pan. Add garlic, oregano, basil, black pepper, crushed red pepper and allspice and stir well to combine. Heat all until fragrant, then add tomatoes, dry white wine and water (I use the water to get all the tomato out of the container. You could use 1/2 cup clam juice instead of the water/wine combo, I just didn't have any on hand.) Bring to a gentle boil, then reduce to simmer for 35 minutes. In the last 5 minutes of cooking, add the clams.
