Ingredients

    1 can (15 ounces) solid-pack pumpkin
    1 can (14 ounces) fat-free sweetened condensed milk
    1/2 cup egg substitute
    1/2 teaspoon salt
    1/2 teaspoon ground ginger
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1 unbaked pastry shell (9 inches)

Directions

In a large mixing bowl, beat the first seven ingredients just until smooth. Pour into pastry shell.

Bake at 425° for 15 minutes. Reduce heat to 350°; bake 25-30 minutes longer or until a knife inserted near the center comes out clean. Cool completely on a wire rack. Store in the refrigerator.
Yield: 8 servings.

    I don't understand your nutritional information. With your ingredients as specified I get 250.6 Cal per serving (256.1 substituting 2 eggs for the the egg subst). Your ingredients for the nutritional calc specify 4 cups of milk which isn't the same as 14oz sweetened condensed which is 60% sugar. - 8/10/08

  • I agree that your nutrition calculations are off, but the recipe makes a very good pumpkin pie. I did double the spices because I like it to have more of a kick! - 8/15/08

  • This was delicious! I did not use the crust, put it in little individual baking cups and topped with 1 tblsp. of Lite Cool Whip. I would say, on Weight Watchers? 4 points. I was impressed, was delicious, already gave the recipe to my friends! - 1/29/08

  • this is like I make my pumpkin pie except I use pumpkin pie spice. Check your can of pumkin and add your egg calories and fat. - 1/20/08
