    1 block tofu
    2 T. peanut or other sauté oil
    2 scallions, thinly sliced
    1 T. sesame seeds

    For the Sauce:
    1/4 cup cashew butter (or other nut butter)
    1/4 c tamari
    1/3 c stock or water
    2 T rice wine vinegar
    2 T brown sugar
    1/2 t red pepper flakes
    2 scallions finely chopped


Be sure to mix the sauce well after adding to the hot pan. It tends to cook fast in the pan center and potentially burn. Lowering the heat, shaking and stirring with a flat wooden utensil usually avoids this.


- Drain tofu and slice crosswise into ~1/2" pieces. Blot well on paper towels to remove excess water, and cut on the diagonal into triangle.
- Heat oil in large cast iron skillet and brown tofu until crispy on both sides
- Combine sauce ingredients in food processor and process until smooth
- Lower heat and add sauce to tofu. Cook until thickened and bubbly.
- Serve on brown rice or soba. Garnish with scallions and sesame seeds
