    3 to 3.5 lb chuck roast
    1 lb of potatoes, rough chopped
    3 Large carrots, sliced 1/2 to 3/4" thick
    3 Celery stalks, sliced 1/2 to 3/4" thick
    1 Medium onion, rough chopped
    1/4 cup of water


Season the roast all over (salt and pepper), then sear the chuck roast in a skillet (NOT a non-stick) on each side to create extra flavor. While the roast is searing, roughly chop the onion and place in the bottom of your slow cooker. Place the seared roast on top of the onions, and add about 1/4 of a cup of water to the skillet while it's still hot while scraping the skillet with a fork to loosen the drippings. Once that's done, pour it over the roast in the slow cooker. Now add the potatoes, carrots and celery in around the roast. Now is the time to add any other seasoning (garlic powder, oregano, etc). Place the lid on the slow cooker and turn on low for 8 hours.
