    2 cans black beans, rinsed and drained
    1-1/2 cups sweet yellow corn kernels (fresh or frozen - if frozen, thawed under cold running water)
    6 tablespoons minced red onion
    the juice of one whole lime
    2 tablespoons extra-virgin olive oil
    1 scant teaspoon kosher salt
    1 teaspoon ground coriander seed
    2 Roma tomatoes, cut into 1/2-inch dice


Comine all ingredients thoroughly and chill. Serves about 8 1/2-cup servings. Excellent under sauteed chicken breasts that have been lightly seasoned with kosher salt, pepper, and cumin.
