    Olive Oil, 1 tbsp
    Butternut Squash, 1 cup, cubes
    Red Pepper 2/3 cup, chopped
    Onions, raw, 1/3 cup, chopped
    Jalapeno Peppers, 1.5 pepper
    Garlic, 1 clove minced
    Campbell's low sodium chicken broth, 1-1/3 cup
    Quinoa - 1 cup raw
    Green Onion 1.5 tbsp chopped


Heat oil in a large saucepan over medium high heat. Add squash and next 4 ingredients (squash through garlic). Saute 4 minutes. Stir in broth and quinoa and bring to a boil.

Cover, reduce heat and simmer 20 minutes or until the liquid is absorbed. Sprinkle with thinly sliced green onions.

Serving = 1 cup
