    1 1/4 c whole oats
    1 3/4 c flour
    1 T baking powder
    1/2 t salt
    1/2 c sugar
    1 c skim milk
    1 egg
    1/4 c unsweetened applesauce
    1 1/2 c blueberries
    1 t vanilla
    2 T sugar
    2 t cinnamon


Filling the muffin cups to the top will not hurt these muffins. I like to make them with the full pint of blueberries, you may prefer using half the amount.


Preheat oven to 425 degrees. Combine oats, flour, sugar, baking powder, and salt. In another bowl, combine milk, egg, applesauce, and vanilla. Add liquid ingredients to dry ingredients; mix just until moist. Do not beat. Fold in blueberries. Fill muffin cups 2/3 full. Mix topping ingredients; sprinkle over muffin batter. Bake 20-25 minutes until done.

Serving Size: Makes 12 muffins.
