    6 oz dried soba noodles
    1/3 cup slice green onions
    1/3 cup matchstick cut carrots
    1 1/2 TBSP rice vinegar
    1 TBSP sesame oil
    1 TBSP fish sauce
    1 TBSP low sodium soy sauce
    1 tsp brown sugar
    1-2 tsp sambal oelek (chilli garlic sauce)


Add sambal oelek to taste - more if you like it spicy!


Cook soba noodles according to package directions, omitting salt and fat. Drain and rinse well.

Combine all other ingrediants in a bowl and add noodles, tossing to coat.

Serve warm or cold.
