Number of Servings: 12


    1 lb box of pasta, cooked and set aside
    2 lbs of shrimp, raw and peeled
    4 tbsp Olive oil
    3 tbsp parsley, flat leaf, chopped
    3 tbsp basil, chopped
    14 grape tomatoes, halved
    2 tsp garlic, minced
    pinch of red pepper flakes
    1 tsp thyme
    1 tsp oregano
    1 lemon, zest and juice
    salt to taste
    Parmesan cheese, freshly grated after serving


Set cooked pasta aside, In a large saucepan over medium high flame, add olive oil, garlic, thyme, oregano, pepper flakes, shrimp. Saute until shrimp is slightly pink. Add tomatoes, basil, parsley, lemon and salt. Saute for 1 minute, then add pasta. Saute for a couple minutes until well blended. Taste and adjust seasonings if needed.
Serve and top with freshly grated parmesan cheese.
