Number of Servings: 15


    1.5 cups All purpose enriched white wheat flour
    3/4 cup Flax seed Meal
    3/4 cup Oat Bran
    1 c. Brown sugar
    1 teaspoons baking powder
    2 teaspoon baking soda
    1/2 teaspoon salt
    2 teaspoons cinnamon
    1 1/2 C shredded carrots
    2 shredded apples (no need to peel)
    1/2 Cup white raisins
    1 Cup chopped pecans
    3/4 Cups skim milk
    2 beaten eggs
    1 teaspoon vanilla


Remove from muffin tins soon after removing from oven and cool on racks. These can be kept in plastic bag after cooling for several days and they also freeze well. Delicious and filling.


Mix dry ingredients and add wet ingredients.
Spray muffin tins with Pam and fill muffin cups 3/4 full, Bake in pre heated 350 degree Fahrenheit oven 15 to 19 minutes

Serving Size: Makes 15 medium sized healthy, yummy muffins!
