    2 large chicken breasts, cut lengthwise into 1/2 strips
    10 green olives, sliced
    6 oz feta cheese
    2 tsp chili powder
    1/2 lime, juiced
    7 Ritz crackers
    1 1/2 cups cooked brown rice
    1 tomato sliced


Cook brown rice and set aside. Marinate chicken in lime juice and chili powder. Spray a casserole dish with vegetable spray, spread rice on bottom. Arrange tomato slices on top. Sprinkle on olive slices. Arrange chicken slices lengthwise on top, then sprinkle on feta cheese, then cracker crumbs. Cover with foil and bake at 350 for about 45 minutes.
