    1 tbsp olive oil
    1/3 cup chopper onion
    1/3 cup chopped celery
    1/3 cup chopped green bell pepper
    1 tbsp chopped fresh thyme
    1 cup quinoa
    2 tsp ground red pepper
    3 garlic cloves, minced
    2 cups chicken broth
    2 green onion, thinly sliced
    1/8 tsp Tabasco Sauce


This recipe was adapted from a Dirty Rice recipe that appeared in Cooking Light April 2012. We substitute Quinoa for the rice to up the protein. And it quiet yummy!


Heat a medium sauce pan over medium-high heat. Add oil to pan; swirl to coat. Add onion, celery, green bell pepper, and thyme; saute for 4 minutes. Add quinoa, paprika, 1/4 tsp red pepper, and garlic; saute 1 minute. Add the chicken broth and 1/4 tsp salt; bring to a boil. reduce heat, cover, and simmer 12 minutes. Let stand 5 minutes.

Saute chicken livers in olive oil or cooking spray for 4 minutes or until lightly brown. Add liver mixture and Tabasco sauce to the quinoa mixture. fluff with fork.
