    2 Tbsp Olive Oil
    1 small onion, diced
    3 tsp grated fresh ginger root
    1 clove garlic, minced
    1/2 boneless, skinless chicken breast, diced
    1 cup sliced mushrooms, crimini, shitakii and oyster
    1 cup chopped swiss chard
    1 cup chopped kale
    1 cup chopped collards
    1 tsp red pepper flakes (or more to taste)
    1 tsp fresh ground black pepper (or more to taste)
    2 Tbsp tamari soy sauce


Heat the olive oil in a large skillet. Add the onion, ginger and garlic. Cook for 2 minutes over medium heat. Add the chicken, mushrooms and tamari, and cook until the chicken is almost done. Add the greens and cover, cooking for a couple minutes more. Season with the red pepper and black pepper. Take off the heat and let sit for 5 minutes. Serve over brown rice for a complete meal.
