Introduction

An incredibly easy vegan chili even my carnivore husband adores! An incredibly easy vegan chili even my carnivore husband adores!
Number of Servings: 3

Ingredients

    1 can Goya black beans, rinsed and drained
    2 cans Ro*tel diced tomatoes with green chiles
    Half a package Morningstar Veggie Crumbles
    1 teaspoon cumin
    cayenne pepper (optional)
    Tabasco (optional)
    Low-fat shredded cheese (optional)

Directions

1. Heat tomatoes and black beans in a saucepan over medium heat.

2. Stir in 1 teaspoon cumin (more or less, according to personal taste).

3. Add frozen veggie crumbles, and stir until crumbles are thawed and chili is heated through. Do not boil.

4. Add a pinch or two of cayenne if you prefer the flavor spicier. Start with just a little, as it will get hotter over time!

My husband likes his topped with a sprinkling of low-fat shredded sharp cheddar cheese and a shot or two of Tabasco sauce, but I think it's fine "as is".

Makes 3 servings. Freezes well.
