Number of Servings: 8


    8 chicken sausages ( used al fresco brand)
    2 bags fresh baby spinach ( 16 cups), you can use less if you would like.
    2 cans garbanzo beans
    2 cloves garlic
    1 onion
    2 crushed bay leafs
    1 teaspoon paprika
    1/4 teaspoon red pepper flakes
    1/2 of a 6 oz can tomato paste
    1.5 cups chicken broth
    1 pound fingerling potatoes, cut to 1/2 inch pieces


brown the sausage and set aside
sautee onion, garlic, paprika and red pepper flakes in pan, until browned add, tomato paste

then an potatoes, bayleaf and stock and cook for 10 minutes

Add garbanzo beans, cook for 5 minutes

Chop and add sausage back into pan and let simmer, add spinach until it wilts.

Serving Size: Makes 8, 1.5 cup servings
