Introduction

Ingredients

    Tahini
    Vinegar
    Olive Oil
    Salt
    Sugar

Directions

Start with roughly equal amounts of tahini, vinegar, olive oil. Mix and blend with a fork. Add salt to taste - not too much. Add sugar for a more "Asian" flavor. You can also add some toasted sesame oil for a richer flavor.

For an oilier dressing, add more olive oil.

For a creamy consistency, you can add more vinegar, or if you don't want it too acidic, add water and mix it in. You can get a very beautiful, velvety consistency by adding water. It'll be thick like mayonnaise, and you can use it on a tossed salad.

You can spike the dressing with sesame seeds, basil seeds, garlic powder, grated garlic, apple cider vinegar, ground ginger, etc.

I think if you added a lot of garlic and lemon, and perhaps some sumac, it would probably taste more Mediterranean.

Remember that if the flavor is not quite right, you can add your spices onto the tossed salad.
