Ingredients

    Sweet potato, cooked, baked in skin, without salt, 2 large Brown Sugar, .5 cup, packed
    Egg white, fresh, 3 large
    Baking Powder, 1 tsp
    Nutmeg, ground, 1 tsp
    I Can't Believe It's Not Butter, Light Spread (Soft), 1 Tbsp, 1.5 serving
    Half and Half Cream, .3 cup

Directions

In a large pot bring water to a boil and add the potatoes, cook 20-25 minutes.

Once finished set aside and let them cool down. Once they are able to be handled peel and mash the potatoes. Then mash and combine with the cinnamon, nutmeg, half and half, and melted butter.

Beat the egg whites until foamy and then add the baking powder and beat until stiff. Gently fold in the sweet potato mixture.

Pour into souffle dish and bake at 325 for 45 minutes.
