    Edamame, 1/3 cup cooked
    Eggs, 2 Large
    Water, 1 tsp.
    Soy Sauce, 1 tsp.
    Garlic poder, for seasoning
    Shredded Carrots, 1/4 cup
    Wheat Toast
    Olive Oil, 1 tsp.
    Cheddar Cheese, 2 TBSP shredded


In a bowl, whisk 2 eggs and 1 tsp water until beaten. Add 1 tsp soy sauce and season with garlic powder and whisk. Prepare 1/4 cup shredded or finely chopped small carrots (I used one carrot and chopped it finely and it made about a 1/2 cup) and cooked edamame- 1/3 cup. Heat olive oil in pan and cook egg mixture and carrots and edamame until egg is firm and no longer runny. Toast one piece of wheat bread. Top toast with egg and veggie mixture, and put cheddar cheese on top
