Number of Servings: 10


    4 cups water
    3 cups diced potatoes
    15 large baby carrots, diced
    1/2 cup diced celery
    1/4 cup diced onion
    6 tablespoons Blue Bonnet Light Margarine (stick)
    1/2 cup flour
    2 cups fat free milk
    2 cups light cheddar cheese, shredded
    1 cup diced lean ham
    1 teaspoon salt
    1 teaspoon pepper


Boil the water. Add potatoes, carrots, celery and onion. Return to boil, and cook for about 10 minutes until potatoes are tender. In a medium saucepan, melt butter. Slowly whisk in flour a little at a time. Then add milk slowly, whisking to keep it creamy. Cook over low heat, stirring constantly until thickened (about 5 minutes). Remove from heat and stir into potato mixture. Add cheese and stir until melted, then add ham. Serve immediately. Do not bring to a boil again.

  • Absolutely delicous! Everyone in the family ate this, and loved it, including those who did not know it was "low fat". I doubled the recipe and there were no leftovers! I will make this one again and again! - 5/15/08
