Number of Servings: 7

Ingredients

    1 can black beans with juice
    1 cup frozen corn
    3 tbsp Onions, chopped
    2 tbsp Chili powder, or to taste
    1 tbsp Garlic powder, or to taste
    Roughly an oz of hamburger meat, fully cooked and drained. (optional)

    Soft tortillas
    Spinach
    Cheddar Cheese
    Sour Cream
    Salsa

Tips

Calories are calculated without the shells.


Directions

Fry beef with diced onion till cooked. Drain. If going meatless, brown the onion and continue.

Add beans with juice, corn, and rest of spices. Cook on medium till simmering and the liquid thickens.

Spoon out two table spoons per shell.

Serve topped liberally with fresh spinach and salsa and conservatively with a smudge of cheese and a dab of sour cream.
