Ingredients

    2.5 lbs. Beef Roast
    6-8 sm. Russet Potatoes (w/ skin), cut in quarters
    1 - 16 oz. bag of Green Giant Baby Cut Carrots
    1-2 med. Onions, chopped
    6 Cloves of Garlic, smashed
    1 - 32 oz. can of Swanson's Beef Broth
    2 c. Water
    2 Boullion Cubes

    1/4 c. Cornstarch for thickening
    1/2 c. Water

Directions

Add all ingredients (except cornstarch) to crock pot and cook on low for at least 8 hours or on high for 5-6 hours. Mix cornstarch with water, add to crockpot in the last 20 minutes of cooking to thicken the gravy.

Yeilds 6 servings. Freezes well.
