    1 C. Cubed Potato
    1/4 C. Chopped Onion
    Non-Stick Canola Oil Spray
    1 C. Fresh or Frozen Broccoli Florets
    1/2 C. Julienned LightLife Smart Deli Baked Ham Style
    1 C. Egg Substitute
    1 Tbsp. Skim Milk
    1/4 tsp. Lemon-Pepper Seasoning
    1/4 tsp. Dill Weed


1. In a skillet, cook the potatoes & onion in non-stick spray over medium heat until lightly browned, about 10 minutes. Add broccoli; cook until tender. stir in "ham". In a bowl, beat egg substitute, milk, lemon-pepper & dill if desired. Pour over potato mixture; cook for 3-5 minutes or until eggs are completely set, stirring occasionally.
