    2 large slices of bread (I use Oroweat Grains & More Double Fiber)
    1 tbsp homemade vegan pesto (see tips for recipe--it is SO easy and so worth it)
    2 slices red tomato (fresh)
    1 romaine leaf
    2 tbsp fat-free feta (I used the kind with tomato & basil, to mimic Panera's bread flavorings)
    1 tbsp pimentoes (found in a canned/jarred food aisle)

Tips Happy Herbivore's pesto recipe saves you TONS of fat and calories.


Toast bread.
Spread pesto over one slice, top with pimentoes, then feta, romaine, tomato, and second bread slice. Cut in half and devour!
