    Head of cauliflower
    Box of Barilla Plus macaroni or rotini
    a few large dollops of light sour cream
    about 1 cup of low fat cottage cheese
    shredded sharp cheddar cheese, 3 cups
    2 or 3 tablespoons of bread crumbs (optional)
    about 3 tbsp milk
    salt and seasonings of choice, to taste


Sorry all measurements are approximate. Feel free to tweak it as you wish. I just threw it all together, eyeballing the measurements (though I'm VERY good at eyeballing).


Cook pasta according to the box.
Steam or boil cauliflower florets until desired tenderness. Drain in colander and use a knife to slice through pieces until well chopped (smaller pieces blend in better with the pasta, so you barely notice it's there). Pat with paper towels to remove excess moisture.
Mix pasta and cauliflower in baking dish. Mix in all other ingredients other than bread crumbs. Blend well. Top with bread crumbs.
Bake in 350 degree oven for 40 minutes.
