Introduction

Multi-purpose tomato sauce that is mostly vegetables. Feel free to substitute/add other veggies like zucchini, squash, greens, etc. Great on pasta or with beans. Ingredients

    1 medium head cauliflower
    1 medium stalk broccoli
    3 medium carrots
    1 28oz. can low sodium diced/chopped tomatoes
    1/4 tsp salt
    4 cloves garlic, crushed
    1 tsp virgin coconut oil

Tips

I like to add a teaspoon of garlic-chili paste with the crushed garlic for extra spice.


Directions

Dice vegetables finely and steam for 5-10 minutes. Meanwhile, heat oil in a saucepan and cook garlic, then add tomatoes and salt. Add steamed veggies to sauce and simmer for 15-20 minutes. Adjust salt minimally if sodium is a concern.

Serving Size: Makes 4-6 one-cup servings
