Introduction

Quick and easy semi-homemade beef enchiladas. Great for a pot luck dinner or for entertaining. Quick and easy semi-homemade beef enchiladas. Great for a pot luck dinner or for entertaining.

Ingredients

    1 X pound of 93% lean ground beef
    6 X large tortillas
    3 cups cheddar cheese
    1 x 8 oz can of tomato sauce
    1 x 10 oz can of Old El Paso enchilada sauce
    1 x packet of McCormick enchilada mix

Tips

Don't forget to rinse and drain your ground beef. It cuts down on the fat and calories.


Directions

1) Preheat oven to 400 degrees

2) Combine packet of enchilada sauce mix with can of tomato sauce in a small sauce pan over low heat.

3) Brown ground beef

4) drain and rinse ground beef

5) Combine enchilada sauce packet/tomato sauce mixture to ground beef

6) Evenly distribute beef/sauce mix into 6 large tortillas

7) Add 1/8 cup of cheddar cheese in each enchilada

8) roll up your enchiladas and place in a large casserole dish

9) Poor 10 oz can of Old El Paso enchilada sauce over each enchilada

10) Sprinkle 1/8 cup of cheddar cheese on top of each enchilada

11) Bake in 400 degree over until cheese is baked

12) Olé
