Ingredients

Ginger Miso Dressing:
1/4 Cup Miso Paste
1/2 tsp Sesame Oil
1 Tbsp Extra Virgin Olive Oil
2 Tbsp Aji Mirin
3 Tbsp Rice Wine Vinegar
1 Tbsp Lemon Juice
4 tsp Brown Sugar
3 tsp Ground Ginger
1/4 tsp Garlic Powder
Broccoli Salad:
3 Cups Broccoli Florets, chopped small
1/2 Cup Green Onion, Sliced Diagonally
1/4 Cup Carrots, Grated
1/2 Cup Alfalfa Sprouts
1/4 Cup Raisins
2 Slices Turkey Bacon, Chopped fine
1 tsp. Toasted Sesame Seeds
Tips
You can add nuts for extra crunch and a boost of energy but adjust your nutritional information accordingly.
Directions
Dressing:
Mix together the Miso Paste, Sesame Oil, Olive Oil, Aji Mirin, Rice Wine Vinegar, Lemon Juice then run through a fine strainer to remove any large particles of soy bean, ginger or lemon pulp.
Mix the brown sugar and garlic powder into the Miso paste mixture then set dressing aside to rest while you prepare the salad.
Salad:
Mix all salad ingredience together in a large bowl then blend in salad dressing. Toss with sesame seeds and keep chilled.
Serving Size: Makes 6 1/2-cup servings.
