    1.5 cups quinoa
    3 cups water
    1/2 cucumber, chopped
    1 orange bell pepper, chopped
    1 cup chopped parsley
    1/4 cup olive oil
    1/4 cup lemon juice
    1 tsp sea salt
    ground pepper to taste


Can add garlic and other veggies such as celery, carrots, tomatoes, depending on taste preferences and what's on hand


Cook quinoa according to directions, cool to room temperature
Mix salt, pepper, olive oil and lemon juice in a large bowl, add cucumber, pepper, parsley and cooled quinoa - mix well

Serving Size: Makes 10 1-cup servings
