    1lb Ground Turkey
    1 Can Black Beans, drained and rinsed (2 Cups)
    1 Red Pepper, Chopped
    1 Cup Salsa
    16 Whole Wheat Tortillas 7" 100 Cals ea
    2 Tbsp Chili power
    1 tsp Cumin
    1 tsp Cayenne
    1 Cup Shredded Cheese
    1 Cup Light Sour Cream
    Arugula or other lettuce to taste


If you want to enjoy one large burrito instead of two small ones, use a large 160 calorie tortilla, and double the size of remaining ingredients (ie 1/2 Cup mixture, 20 grams of cheese etc. Take away 40 calories from final count.


Brown ground turkey. Add remaining ingredients except for cheese, lettuce and sour cream. Heat thoroughly. Taste for seasonings. Add salt to taste. If mixture is too dry, some chicken stock or water may be added.

Add lettuce and 2TBsp cheese each.

Add 1/4 Cup of mixture to Tortilla. Top with a generous amount of lettuce; 1 Tbsp (10 gr) shredded cheese; 1 Tbsp of Sour Cream. Wrap and serve.

Serving Size: Makes 2 Burritos per serving.
