    1-3/4 c. whole wheat flour
    3/4 c. sugar
    1 tsp. baking soda
    1/4 tsp. nutmeg
    1/4 tsp. cinnamon
    1/4 c. ground flax seed
    2 eggs, lightly beaten
    1/2 c. fat free Greek vanilla yogurt
    1/4 c. butter, melted and cooled
    1 tsp. vanilla extract
    2 c. fresh strawberries, coarsely chopped


1. In a small bowl, combine the first 6 ingredients.
2. In another bowl, whisk the eggs, yogurt, butter and vanilla.
3. Stir into the dry ingredients, just until moistened.
4. Fold in strawberries.
5. Fill muffin cups coated with cooking spray or lined with paper lines about 2/3 full.
6. Bake at 375 degrees for 15-18 minutes or until a toothpick inserted in the center comes out clean.
7. Cool for 5 minutes before removing from pan to cooling rack.

Serving Size: Makes 17 muffins
