Ingredients

    1 sweet potato
    1/4 bunch broccoli, finely chopped (about 1 cup)
    2 teaspoons olive oil
    1 large garlic clove, minced
    1/8 tsp red pepper flakes
    1/4 cup water
    salt

Directions

1. Preheat oven to 400degrees
2. Wash the potato and pierce the skin. Bake for 60 minutes.
3. Remove and let cool, and lower oven temp to 350.
4. In a medium saucepan, add oil, garlic, and red pepper flakes. Sautee 1 minute. Add broccoli and sautee for 30 seconds. Add water, reduce heat, simmer for 10 minutes, or until broccoli is tender.
5. When the potato is cool, slice it in half and scoop out the insides, adding it to the pan with the boroccoli. Leave about 1/4 of the potato behind to strengthen the shell! Mix, and salt to taste.
6. Put this back int he potato shell, and drizzle with olive oil. Bake for 15-20 minutes.
