    1/2 cup Matzo Meal
    2 large eggs
    2 tbsp oil
    dash of salt (optional, but included in this recipe)
    2 tbsp water or broth


Eat in chicken soup for Passover!


Whisk eggs in a small bowl. Add all remaining ingredients except water (or broth). When combined, add water (or broth).

Cover bowl and refrigerate for at least 20 minutes.

Form the mixture into eight equally-sized matzo balls. Drop into boiling water or broth and cook, covered, for 40 minutes or until the balls are soft.

Serving Size: Makes 8 golf-ball-sized matzo balls, two balls per serving.
