Ingredients

1/2 c dried white beans
1 c dried chili beans
1 c dried red kidney beans
4 oz lean ground beef
2 teasp olive oil
1 cup chopped celery
1 cup chopped onion
1 shredded carrot
2 tblsp minced garlic
2 cans (398 ml) Hunts tomato sauce (no salt added)
1 can (28 oz) Pres Choice tomatoes (no salt added)
1 tblsp cumin
1.5 tblsp chili powder
1 tblsp red pepper flakes
1 cup frozen corn
1 tblsp dried basil
Directions
mix beans together and soak overnight in 10 cups water. In the morning, drain and rinse, return to dutch oven, add water to fill pot to one inch from top, bring to boil, reduce heat, cover and cook on low for 1-1/2 hours.
Saute onion, celery, garlic in olive oil til soft, set aside and brown beef in same skillet.
Transfer browned beef and sauteed mix to large dutch oven with cooked beans, add spices, grated carrot and corn and cook, uncovered, on medium for 20 minutes. makes 10 servings
