    16 oz dried black beans, soaked overnight
    I bunch fresh cilantro, roughly chopped
    1 yellow onion, diced
    2 cloves garlic, chopped
    1/2 tsp cayenne pepper
    1 diced red bell pepper
    Chicken broth (use veggie broth, if desired)


After soaking the beans, rinse and put in a large pot with the remainder of the ingredients. Cover with equal amounts of water and organic chicken or vegetable stock: just enough to cover the everything.

Let simmer for a couple hours, or longer, if you can.

Serving Size: Makes about 2 quarts? We usually eat a bunch and then have plenty leftover to eat throughout the week.
