Number of Servings: 4


    1 zucchini, quartered and sliced.
    1 broccoli crown chopped
    1/5 cake Extra Firm Tofu, crumbled
    1/4 cup Vegetable Broth
    1/4 tsp Sea Salt
    1/2 tsp Ground Cumin
    2 cloves Garlic
    1 cup cooked brown rice with lentils
    Canola Oil Spray
    1/2 cup Water


Spray Frying pan with Canola Oil Spray.
Add Tofu and Zucchini
Add Garlic, spices and Vegetable Broth
Cover and cook until liquid has evaporated.
Add brown rice with 1/4 cup water.
Cook until liquid has evaporated.
Add broccoli and 1/4 cup water.
Cover and cook until water has evaporated.

Makes topping for four large potatoes.
