    1 pkg. Nasoya Egg Roll Wrappers
    3 cups of Cole Slaw mix
    1 cup of grated or julienne carrots (optional)
    1-1/2Tbsp Garlic powder (minced/crushed is better)
    1-1/2Tbsp Onion powder
    1/2 Tbsp. Extra virgin olive oil
    1/2 Tbsp. Soy sauce (light is fine)
    1/2tsp. minced ginger (ground is fine)


For a more complete and filling snack, add protein (lean chicken, beef, pork, fish or shrimp).


In a saute pan, heat 1/2 tbsp. extra virgin olive oil, garlic, and red pepper flakes. Add cole slaw mix, onion powder, and garlic powder. Combine. When the pan becomes very dry, add 1/8 of cup of water. Stir quickly, cover pan, reduce heat to low and let steam 10-15 minutes. Remove from heat and transfer mixture to a mixing bowl. Add fresh grated ginger or ground ginger and soy sauce. Mix well. On a flat surface lay out one wrapper. Arrange it so that it looks like a diamond. Place 2tbsp of the mixture into the middle of the diamond and fold lower point upwards. Fold each of the sides inward. It should look like an open envelope at this point. To seal, brush the remaining point with water, dampen all the edges of the flap and roll upwards from the bottom. Place on a parchment lined (or lightly sprayed) cookie sheet, flap side down. Spray lightly with cooking oil spray and bake at 400 degrees for 10-12 minutes.
