Ingredients

    2 c. all purpose flour
    2 tsp. baking powder
    2 tsp. baking soda
    2 tsp. cinnamon
    1/8 tsp. nutmeg
    1/8 tsp. cloves
    1 c. pine nuts
    1 c. extra virgin olive oil
    1 c. sugar
    1/2 c. (1 stick) unsalted butter, melted
    1/2 c. packed brown sugar
    4 large eggs
    3 tbsp. dark molasses
    2 tbsp. maple syrup
    2 c. chopped fresh pineapple, or 1 (16 oz.) can crushed pineapple, drained
    2 heaping cups shredded carrots
    1 heaping cup shredded zucchini
    1/2 c. raisins

Directions

Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans.

In a large bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and pine nuts. Mix well.

In another bowl, combine remaining ingredients: olive oil, sugar, butter, brown sugar, eggs, molasses, maple syrup, pineapple, carrots, zucchini, and raisins. Mix well.

Combine wet and dry ingredients, mix well using a bowl mixer or hand mixer on medium setting for 2 minutes.

Divide the cake batter evenly into the cake pans.

Bake for 25 to 30 minutes or until toothpick inserted into center of cakes comes out clean.

Cool in pans for 30 minutes.

Remove cakes and frost with Mascarpone Frosting recipe. (see Tips)
