Introduction

it isn't as satisfying as squash with butter and sugar but it's close and healthy it isn't as satisfying as squash with butter and sugar but it's close and healthy

Ingredients

    1 large acorn squash
    4 tbsp. diced dried apricots
    2 tbsp. chopped raw cashews
    1 15 oz can of crushed pineapple, juice reserved
    2 tbsp. raisins
    cinnamon to taste

Directions

cut squash in half and remove seeds. bake face down in 1/2 inch of water for 45 minutes at 350F.
cover apricots in bowl with some pineapple juice. add the cashews, pineapple and raisins and soak.
when squash in done put mixture in each half and top with cinnamon and cover with aluminum foil and bake for another 30 minutes
